The next time you want to
give a quick new twist to a
meal or a snack, look to the
jars of jams, jellies and
preserves in your refrigerator.
For instance:
Make a barbecue sauce by
mixing V4 cup orange mar-
malade or apricot, peach,
grape, plum, or pineapple jam
or preserves with 1/2 cup chili
sauce and 2 tablespoons steak
sauce.
For a tasty spread, mix
several tablespoons of your
favorite flavor of jelly, jam, or
preserves with softened
cream cheese. Serve on muf-
fins or toasted bagels.
Dress up carrots or sweet
potatoes by combining 'A cup
apricot, raspberry, cherry,
peach, pineapple, strawberry,
or plum jam or preserves with
one drained 16-ounce can car-
rots or an 18-ounce can sweet
potatoes. Sprinkle chopped
walnuts on top.
Heat your favorite jelly,
jam, or preserves with a little
lemon juice and you have a
tasty topping for ice cream,
cake, pancakes, or fresh fruit.
For a make-ahead mousse,
beat 1 cup whipping cream
and 2 tablespoons amaretto to
stiff peaks. Fold in 1/2 cup ap-
ple, cherry, currant, grape,
mixed fruit, orange, plum,
raspberry, or strawberry jelly.
Spoon the mixture into four
dessert dishes; freeze. At serv-
ing time, top with toasted slic-
ed almonds.
As a special ice cream treat,
spread any flavor of jelly on
two toasted waffle squares or
rectangles. Sandwich a slice
of vanilla ice cream in
between.
Make daisy biscuits: Separ-
ate one package refrigerated
biscuits. Using kitchen scis-
sors, make 5 small cuts
around the edge of each re-
frigerated biscuit, cutting
about halfway to center.
Make a depression in the
center of each biscuit with
your thumb. Spoon 1/2 tea-
spoon of your favorite jam or
jelly into each thumbprint.
Bake according to the pack-
age directions.
For an easy ice-cream pie,
dollop 1/3rd cup seedless red
raspberry or strawberry jam.
over the bottom of a 9-inch
graham-cracker-crumb pie
shell. Spoon 1 pint softened
lemon sherbet on top of jam.
Top with one 4-ounce con-
tainer frozen whipped dessert
topping, thawed. Freeze for 4
to 6 hours. Let stand at room
temperature 20 minutes
before serving. Makes 8
servings.

Here are two more recipes
using preserves:
STUFFED CABBAGE
WITH APRICOT
PRESERVES
12 large cabbage leaves
boiling water
1 pound ground beef
2 tablespoons uncooked
rice
1 egg
1 onion
1 /2 teaspoon salt
pepper to taste
one 21/2 oz. can of tomatoes
juice of 2 lemons
1 /4 cup brown sugar
Y2 cup apricot preserves
Soak cabbage leaves in boil-
ing water while preparing the
meat. Combine meat, rice,

egg, onion and seasonings.
Drain cabbage leaves. Place a
portion of meat mixture in
the center of each cabbage
leaf. Roll up and fasten with
toothpick. Place in deep ket-
tle. Cover with the remaining
ingredients. It may be neces-
sary to add more water just to
cover. Bring to a boil, reduce
heat, and simmer gently
about 2 1/2 hours. Serves 6 to 8.

BARBECUE SAUCE

For Shabbat lunch, try cold
chicken with barbecue sauce.
This recipe is sufficient for
two fryers.
2 tblsps. salad oil
1 onion, diced
2 tblsps. brown sugar
Y2 cup lemon juice
1 /2 cup apricot preserves
2 tblsps. vinegar
1 cup ketchup
2 tbslps. worcestershire
sauce
1 cup water
Combine all ingredients.
Simmer on very low fire for
45 minutes. Pour over two
fryers cut into eighths. Bake
covered for one hour, un-
covered for 20 minutes (bast-
ing) or until chicken is tender.
Serves 8. ❑
