OIL AND VINEGAR DRESSING
Salads are healthy. Many of us, however use dressings that are not.
This Oil and Vinegar dressing is from the American Heart Association
cookbook and comes complete with a nutrient anaylsis.
3 Tbl.
Olive Oil
3 Tbl.
Cider or Wine Vinegar
2 Tbl.
Water
1-2 tsp.
Stone-ground mustard
1 Tbl.
Finely chopped fresh or 1/2 teaspoon dried parsley, sweet
basil, oregano, chives or tarragon.
In a jar with a tight fitting lid, combine ingredients. Shake well to
blend.
Make this dressing several hours ahead and refrigerate to allow the
flavors to blend.
1 /3 Tablespoons per serving. Serves 6.
