accommodates all tastes and is very
festive:' Fillion says. "When guests are
dressed up, it can be awkward to
handle a glass and a plate of food. A
creative chef prepares hors d'oeuvres
which can be eaten in two or three
bites."
An open bar is usually available
for guests but," says Fillion, "most
guests drink champagne or wine
initially."
Many receptions begin in the
lobby of the Townsend. Guests are
greeted with sounds of a pianist, a
harpist, or at a recent Jewish wedding,
a five-piece group playing ethnic
music.
"A really good chef not only
makes delicious foods, but prepares
them very artistically as well," Fillion
says.
Some elegant hors d'oeuvres can
include: chicken strudel, a two inch
long filo filled with chicken or
vegetable mixture and served in
miniature paper cups; a tray of blinis;
Beggars' Pocketbooks — small bag
made of dough and filled with brie and
spiced jelly and tied at the top with
a green onion; tenderloin croissants
served with horseradish sauce.
An Oriental theme consisting of
tempura vegetables, sushi and spring
rolls is also a popular option. "For the
diet-conscious guest, most hosts
always order vegetables:' Fillion adds.
If a couple is more cost aware,
Fillion suggests gearing the party more
towards the food. A punch can be
served along with white wine. Cheese
straws, spinach pies, and a mini quiche
are also very lovely when passed. Set
