Place together in bottom of
pie shell. When one-third of
the filling is used, sprinkle
one-third of the peaches
around layer.
Sprinkle with remaining
dusting, continuing to layer
until all ingredients are
used. Be sure to put 1 1/2 table-
spoons margarine in second
layer.
Roll out top crust. Fold
edges together and seal with
water. Decorated top with any
desired dough shape. Egg
wash: top with 1 beaten egg
and 1 tablespoon water.

APPLE CRISP
I suggest you use a 9-by-14
inch ovenproof dish.
11/2 cups flour
% cup brown sugar,
(tightly packed)
1% teaspoons cinnamon
1 stick plus 2 tables-
poons margarine,
chilled and cubed
8 large McIntosh apples,
peeled, cored, thickly
sliced (I quarter ap-
ples and cut each
quarter into three
slices.)
2 tablespoons Cognac
Preheat oven to 375 ° F.
TOPPING: Combine flour,
sugar, 1/2 teaspoon cinnamon
in a large bowl. With a pastry
blender or by hand, crumble
margarine into the mixture.
Add walnuts and combine.
APPLES: Place apple slices
in an ungreased dish.
Sprinkle with Cognac and re-
maining cinnamon. Mix well.
Cover with topping. Bake 30
to 45 minutes in upper third
of oven until topping is brown
and apples are tender. If top-
ping browns before apples are
semi-soft, cover dish with foil
and continue baking for a few
minutes. Serve warm or cold.

This dessert goes together a
lot faster and easier than
classic dumplings. Roll up
apples, sugar and spice in a
tender sour-cream pastry.
Serve warm with vanilla or
cinnamon ice cream or light
cream.
APPLE DUMPLING
ROLL-UPS
1 beaten egg
One 8-ounce carton dairy
sour cream
2 cups all-purpose flour
2 tablespoons sugar
2 tablespoons baking
powder
1 /4 teaspoon baking soda
1 /4 teaspoon salt
4 cups thinly sliced,
peeled cooking apples
1 /4 cup sugar
1/2 teaspoon ground
cinnamon
1 /4 teaspoon ground
nutmeg
Lemon Sauce: (recipe
follows)
2 tablespoons margarine
or butter
For dough, in a medium
mixing bowl combine egg and
sour cream. In a small mixing
bowl stir together flour, 2
tablespoons sugar, baking
powder, soda and salt; add to
sour cream mixture. Mix well.
On a lightly floured surface
roll dough to a 12-inch square.
spread apples on top. Com-
bine 1/4 cup sugar, cinnamon
and nutmeg; sprinkle on top
of apples. Carefully roll up
dough. Cut into twelve 1-inch-
thick slices. Place slices, cut
side down, in greased 13- by
9- by 2-inch baking pan. Pour
Lemon Sauce over. Dot with
margarine.
Bake, uncovered, in a
350-degree F oven 35 to 40
minutes or until golden. To
serve, spoon warm dumplings
and juices into individual
dessert dishes. Serve with
cream or ice cream, if desired.
Makes 12 servings.
Lemon Sauce; Stir together
1 1/2 cups water, 1 1/4 cups
packed brown sugar, 1 cup
