Turn eggplant several times
during baking. Remove from
oven and cool. Cut eggplant
in half and remove soft meat
from skin. Place in a bowl and
mash together with salt and
pepper to taste. Stir in yogurt,
garlic and cucumber. Chill or
serve at room temperature
with fresh vegetable sticks.
Makes about 2 1/2 cups.
QUICK VEGETABLE
PASTA
1 pound rotini pasta
2 tablespoons olive oil
2 cups assorted sliced
vegetables, fresh or
frozen
1 cup plain lowfat or
nonfat yogurt
1/3 cup dijon mustard
1/4 cup chopped parsley
(optional)
Prepare pasta according to
package directions. Drain and
return to a large saucepan.
Stir in olive oil. Add vege-
tables and cook for 2 minutes
over medium heat, stirring
gently. Remove from heat,
cover and let stand for 5
minutes. Stir in yogurt and
mustard. Sprinkle with pars-
ley. Serves 6.
For those who only know
the deli brand, this is how
real egg salad should taste.
HOMEMADE
EGG SALAD
6 large eggs
about 2 tablespoons
vinegar
2 tablespoons margarine,
melted
2/3 cup lowfat or nonfat
plain yogurt
2 tablespoons dijon
mustard
1 tablespoon finely
chopped Bermuda
onion
salt and freshly ground
pepper to taste
Gently place eggs in a
medium sized saucepan and
cover with cold water. Add
vinegar (supposed to keep
eggs from cracking). Bring to
simmer over low heat and
continue simmering for 20
minutes. Drain and immedi-
ately cover with cold water,
cracking the shells with a
knife (helps shell to come off
easily). Remove shells under
cold running water. Place
eggs in a bowl and mash
coarsely with a large fork or
chop with two knives. Add
melted margarine, yogurt,
mustard, onion and salt and
pepper to taste. Serve while
still warm on fresh challah or
warm pumpernickel rolls.
Serves 4.0
