Sift together the flour, bak-
ing soda, salt, and spices.
Alternately add the dry
ingredients and the sour
cream to the egg-sugar mix-
ture, blending just until
thoroughly combined. Stir in
the currants, oats, and
sesame seeds.
Spread the batter evenly to
the edges of the prepared pan.
Bake on a rack in the middle
of the oven until the center is
springy, about 15 to 18 min-
utes. Sprinkle with sugar
while still warm. Cool and cut
into 36 bars.
HARVEST APPLE CRISP
8 cups sliced pared tart ap-
ples (about 8 medium)
1 teaspoon ground
cinnamon
1 teaspoon ground nutmeg
1 /3 cup firm margarine or
butter
1 package golden pound
cake mix
1 /2 cup chopped nuts
Heat oven to 350 °. Mix ap-
ples, cinnamon and nutmeg.
Place in bottom of ungreased
rectangular pan, 13x9x2
inches. Cut margarine into
cake mix (dry) until crumbly.
Stir in nuts. Sprinkle apples.
Bake 50 to 60 minutes or un-
til light golden brown. Serve
warm and, if desired, with
sweetened whipped cream or
ice cream. 12 to 15 servings.

Press onto bottoms of cups to
form a firm, even crust.
For filling, in a mixer bowl
beat cream cheese, sugar,
flour and vanilla with electric
mixer on low speed until well
combined. Add eggs; beat just
until combined. Stir in milk.
Pour cream cheese mixture
into muffin cups. Bake in a
350-degree F oven about 20
minutes or until centers ap-
pear set. Cool. Chill 2 hours
or until serving time. Loosen
sides of cheesecakes with a
narrow spatula; remove from
muffin cups. Place each on a
dessert plate. Spoon about 1
tablespoon Raspberry Sauce
over each; top with several
fresh or frozen raspberries.
Makes 8 servings.
RASPBERRY SAUCE: In a
blender container or food pro-
cessor bowl combine 1/2 of a
12-ounce package of rasp-
berries, 1/4 cup sugar, 1 tea-
spoon lemon juice and 1 table-
spoon raspberry liquer. Cover;
blend until smooth. Sieve to
remove seeds. Makes 3 /4 cup.

or butter, melted
One 8-ounce package
cream cheese
V2 cup sugar
1 tablespoon all-purpose
flour
1 tablespoon vanilla
2 eggs
3 tablespoons milk
Raspberry Sauce (recipe
follows)
Fresh or loose-pack frozen
raspberries
Grease sides and bottoms of
8 muffin cups. For crust, stir
together crushed wafers and
margarine or butter. Divide
mixture among muffin cups.

Shortbread Base:
1 cup unbleached white
flour
1 /2 cup melted butter
1 /4 cup powdered sugar
Mix flour and sugar
together in bowl. Add melted
butter and form into dough.
Press dough with hands into
8-by-8 inch pan. Bake at 350
degrees for 20 to 25 minutes
until ligthly brown on top.
Cool. This can be done in
advance.
Filling:
1 12-ounce bag semisweet
chocolate chips
1 /4 cup water
1 /4 cup pistachio nuts, chop-
ped fine
Melt chocolate chips in
water in top of double boiler
(if you don't have a double
boiler, put ingredients in a
stainless bowl and place over
pot with boiling water).
Whisk until smooth. Pour
evenly over crust. Spread
with spatula to ends of pan.
Sprinkle with pistachios. Cut
in 1 1/2-inch squares. Yields 24
squares.
