Home-Baked Desserts
Counter Winter Doldrums
On warm days, making des-
sert may mean assembling an
assortment of perfectly ripen-
ed fruit, or dishing up a scoop
of ice cream or sherbet.
These options require no
painstaking preparation in a
hot kitchen, and they are
refreshing ways to end a sum-
mertime meal.
With the cooler autumn
weather, however, it is again
possible to enjoy the process
— and the results — of baking
at home.
The dessert you bake need
not be elaborate in order for
it to be fun to make and deli-
cious to eat. A simple cake or
batch of cookies can bring as
much enjoyment as an intri-
cately assembled French pas-
try.
Whatever recipe you choose,
you may want to involve
children in the project.
Assembling and measuring
ingredients, stirring the bat-
ter and assisting with clean-
up are ways that youngsters
can participate and learn.
After the cookies have been
cooled and cut, children can
help wrap the individual
pieces in waxed paper. These
packages can be slipped into
lunch boxes or brown bags for
a special treat during school
or lunch office hours.
The recipes here, culled
from a variety of sources, of-
fer a range of options.
OLD-FASHIONED
DATE-FILLED COOKIES
1 cup butter or margarine,
softened
1 package (3 ounces) cream
cheese, softened
1 cup sugar
1 egg
2 teaspoons vanilla
2 cups flour
2 teaspoons baking
powder
1 /2 teaspoon salt
1 /2 teaspoon nutmeg
(optional)
1 teaspoon grated lemon
peel
'h cup ground toasted
almonds
California Date Filling:
2 cups California dates
pitted
1 /2 cup orange or pineapple
juice, or water
1 tablespoon lemon juice
Prepare dough: In mixer
bowl, cream together butter,
cheese, sugar, egg and
vanilla. Sift together flour,
baking powder, salt and
nutmeg. Stir into creamed
mixture with peel and
almonds. Chill several hours
or overnight.
Prepare date filling: In
saucepan, combine dates with
juice or water. Bring to boil;
reduce heat and simmer 5
minutes. Stir in lemon juice.
Blend smooth in food proces-
sor or electric blender. Cool.
Store in covered container in
refrigerator up to 1 month.
Makes about 2 cups.
Assemble and bake cookies
following one of the varia-
tions below.
SANDWICH COOKIES:
On well-floured surface, roll
dough 1/4-inch thick. Cut into
desired shapes with cookie
cutters. Bake on greased bak-
ing sheet in 375 degree oven
about 8 minutes, until edges
are golden. Cool on racks.
Sandwich like shapes to-
gether with a thin, even layer
of date filling. To decorate,
dust with powdered sugar,
then drizzle with melted
chocolate, or brush with a
thin glaze made from sifted
powdered sugar and milk or
lemon juice, then decorate
with colored sprinkles or
silver dragees. Makes about 3
dozen, 2-inch cookies.
PINWHEELS: Divide
dough in half. Roll each half
to a rectangle about 8 x 10 in-
ches; spread with generous
cup of date filling to within
1 /4-inch of edges. Roll up snug-
ly, pressing edges gently to
seal. Wrap in waxed paper;
chill thoroughly. To bake, cut
3 A-inch slices with sharp
knife. Bake on greased bak-
ing sheet in 350 degree oven
10 to 12 minutes, until edges
are golden. Cool on racks.
Brush with a thin glaze made
from sifted powdered sugar
