Hometown Brisket

Lemon Roast Pullet

Honey Cookies

Brisket (any size)
2 onions, sliced
4 carrots, cut up
4 stalks celery, cut up
2 1/2 tbsp. oil
1 cup Vernors
V2 cup ketchup
V4 cup red wine
1 cup water
Seasonings to taste: salt, pepper, garlic,
paprika.

1 Empire Kosher Pullet
1 tsp. salt
1 /2 tsp. pepper
1 lemon, cut into quarters
3 tbsp. vegetable oil
3 tbsp. margarine
3 tbsp. lemon juice
1 clove garlic, crushed

2 eggs
3 /4 cup sugar
V2 cup honey
3 cups sifted flour
1 /4 teaspoon baking soda
1 teaspoon cinnamon

Place seasoned brisket in roaster. In
pan, on top of stove, brown onions, celery
and carrots in oil. Put in roasting pan with
meat. Mix together Vernor's, ketchup,
wine and water. Pour over meat. Cover and
roast at 325° until meat is tender (around
40 minutes per pound), basting often.
Puree vegetables from roasting pan into
gravy after roasting.

Wash chicken under cold water; pat dry
with paper towel. Sprinkle body cavity with
salt and pepper. Place lemon quarters in-
side body cavity. Place chicken in a shallow
roasting pan. Roast at 325° for about 2
hours until meat thermometer in thigh
registers 180°. Meanwhile, combine oil,
margarine, lemon juice and garlic in small
pan. Heat for about 2 minutes. Pour over
chicken about halfway through cooking
time. Baste often. Serves 6-8, 220 calories
per 4-ounce serving.

Beat the eggs in a bowl. Add the sugar,
beating until thick and light in color. Add
the honey, mixing well. Sift the flour, bak-
ing soda, and cinnamon together. Grad-
ually add the honey mixture, beating stead-
ily. Preheat oven to 300°. Grease a cookie
sheet and dust lightly with flour. Drop the
honey mixture onto the sheet by the table-
spoonful, leaving about 1 inch between
each. Bake for 15 minutes, or until cookies
are dry but not brown. Remove from the
pan at once.
