Spoon onto lettuce lin- ed platter. Rub egg yolks through a sieve to top herring mixture. Chop egg whites and spoon around. Garnish with quartered tomatoes and olives. Place skin side down on a board and sprinkle with salt and pepper. Roll up from head to tail. Pack into a pie dish, just large enough to hold the rolled fillets. Ar- range onions over. Pour equal quantities of water and vinegar over herring to come halfway up the rolls. Add pep- percorns and bayleaves.
