Every chick-
en used in Empire's Grow-Out program is hatched
in our own facility. Every single chick leaving our
hatchery meets Empire's uncompromising stand-
ards for the highest kosher quality.
Although this recipe does not
contain alcohol, the vinegar
cuts the fat and adds a sharp
flavor.
Consider the Feeding •
All feed used
in the growing of Empire Kosher poultry is
produced by our own feed mill under Rabbinic _
supervision. From the purchase of only the best
raw grain to the exact formulation of the highest
quality, all natural feed, and the manufacture of
complete and nutritionally balanced feed ra-
tions, Empire Kosher is in control every step
of the way. Empire Kosher relies on a net-
work of local farmers to raise our ko-
sher chickens to our exacting stan-
dards. Proper care and feeding of
Empire's chickens are carefully
monitored throughout the grow-
ing process. In accordance with
the Jewish dietary laws, all animals
must be humanely treated. Thus, Empi-
re's special poultry is allowed freedom from
cages and allowed to roam in chicken houses.

Consider the Processing.
Our
processing plant is the most modern kosher
poultry plant in the United States. It is especially
designed for kosher product flow. Under constant
Rabbinic supervision, Empire Kosher strives for a
minimum of product handling to bring consumers
everywhere an assured quality kosher product.
Often, USDA approved poultry is rejected by O-U
Rabbinic supervisors. Therefore, only unques-
tionably kosher poultry which meets all the stand-
ards of Kashruth carry the Empire "Symbol of

Not every
breed of chicken is suitable for the kosher process.
Consequently, Empire Kosher has been instrumental

ing farm, our geneticists hand-select stock for the

A quickie my mother never
thought of .. .
HERRING SALAD
1 - 8 oz jar herring tidbits in wine
vinegar, drained
1-16 oz can sliced beets,
drained and diced
1 large potato, baked and
sliced
2 tablespoons chopped pickle
2 hard-cooked eggs
Garnish: lettuce, tomato and
black olives (optional)
In a medium bowl, gently
mix herring, beets, potato and
pickle. Spoon onto lettuce lin-
ed platter. Rub egg yolks
through a sieve to top herring
mixture. Chop egg whites and
spoon around. Garnish with
quartered tomatoes and
olives. Serve with crackers or
thick cucumber slices. Serves
4 to 6 as an appetizer. ❑

Soak herring fillets in cold
water to cover for 6 to 8 hours.
Change water at least once.
Preheat oven to 375F.
Pat fillets dry with paper
towels. Place skin side down
on a board and sprinkle with
salt and pepper. Roll up from
head to tail. Pack into a pie
dish, just large enough to
hold the rolled fillets. Ar-
range onions over. Pour equal
quantities of water and
vinegar over herring to come
halfway up the rolls. Add pep-
percorns and bayleaves. Cover
with a lid or foil and bake in
preheated oven for 45
minutes or until cooked.
Serves 4.
