Robin Lutz, a local home economist who has developed recipes for Martin Gillet & Company, Inc., reports that party-givers this year are moving toward more sophisti- cated dips, particularly dips that taste like they take more time to prepare than they ac- tually do. Lutz has created the follow- ing dip ideas for the holiday season: "Salmon Dill Mousse" whips smoked salmon, cream cheese and dill & lemon dressing into a creamy spread for cucumber slices or crackers. ARTICHOKE DIP WITH PARMESAN PITA CHIPS Artichoke Dip: % cup parmesan pepper dressing % cup (2 ounces) parmesan cheese, freshly grated 1 can (14 ounces) artichoke hearts, drained and chopped Preheat oven to 350 degrees for 10 minutes. 1. Mix dressing, cheese and artichoke hearts in a bowl. 2. Place mixture into a 3-cup casserole dish and bake 20 minutes or until bubbly around the edges. Serve with parmesan pita chips. Parmesan Pita Chips: 1 /4 cup parmesan pepper dressing 1 clove garlic, minced 4 whole wheat mini pita breads (4 ounces) 2 tablespoons parmesan cheese 1. While artichoke dip is in oven, prepare pita chips. 2. Mix dressing and garlic. 3. Split pitas around the edges. Brush each half with dressing and sprinkle with cheese. Cut each half into 6 triangles. 4. Place on a cookie sheet and bake at 350 degrees for 5-8 minutes, or until crisp. Note: Parmesan pita chips may be prepared ahead and served with creamy artichoke dip. Yield: 2 cups.
