YOU DON'T HAVE TO GRATE
FOR YOUR LATKES TO BE GREAT

I remember when grating potatoes was the only way
to make latkes. Fortunately for us potato pancake
lovers, we now have many options that replace the
grater. I am sure that there are some cooks that still
grate and feel that no other way tastes the same. For
those of you that are more open minded you may try
food processors, blenders and my favorite (the one I
feel is closest in texture to those grated for genera-
tions) the meat grinder. I have a hand grinder but if
you have the electric variety so much the better. Put
your onions cut in quarters and potatoes through the
meat grinder at the same time so that the onions will
not slide.

POTATO PANCAKE

Another latke tip is to separate your eggs and beat
the whites until stiff, this makes for lighter latkes. I
was going to print my recipe for potato pancakes,
however I realized it was one of those that consisted of
a bit of that and pinch of this, after all potatoes are all
not the same size and neither are onions.

I am sure that no matter what recipe you use, your
latkes will be great. Have a Happy Chanuka.
