knife. Pull out tube and run
knife under bottom to free
completely from pan. Place on
cake platter and dust with
confectioner's sugar (op-
tional). Slice with saw edged
knife or cake divider. Serve
with fruit toppings (below).
Serves 12 to 16.
WINTER FRUIT
COMPOTE
1 cup pitted prunes,
quartered
1 /2 cup dried apricots,
halved
3 /4 cup apple juice
1/2 cup chopped mixed
fresh fruit (apples,
pears)
1 /4 cup orange flavored
liqueur (such as
Sabra)
2-3 tablespoons honey,
warmed
In saucepan, place prunes,
apricots and apple juice.
Bring to simmer, covered.
Remove from heat and let
stand for 30 minutes. Add
fresh fruit, liqueur and honey
to taste. Serve hot or cold,
spooned over sliced angel food
cake. Makes about 2 cups.
HOT CHERRY TOPPING
1/2 cup currant jelly
juice of 1/2 lemon
12 oz package frozen,
unsweetened pitted
cherries
In saucepan, place currant
jelly and lemon juice. Heat
over medium heat, stirring
often until jelly is melted.
Add cherries and cook over
medium heat until cherries
are thawed and mixture is
hot, about 5 minutes. Pour in-
to a serving bowl to spoon
over wedges of cake. Makes
about 2 cups.
MOCHA ANGEL
FOOD CAKE
1 cup cake flour
1 tablespoon instant
expresso coffee
1 tablespoon
unsweetened cocoa
powder
11/2 cups superfine sugar
11/2 cups egg whites (12-14
large eggs)
11/2 teaspoons cream of
tartar
Mocha Glaze (recipe
follows)
8-10 chocolate coffee
beans to decorate
Preheat oven to 350
degrees. Sift flour, coffee,
cocoa and 3 /4 cup sugar onto
wax paper. Repeat and set
aside.
In a large bowl, beat egg
whites until foamy. Add
cream of tartar and beat un-
til soft peaks from. Sprinkle
remaining sugar over, 1/4 cup
at a time, and beat at high
speed until combined.
Sprinkle 1/4 flour mixture over

and gently fold in with wire
whistk. Repeat 3 more times
with remaining flour mix-
ture. Spoon into 10-inch tube
pan. Bake in preheated oven
for 50 minutes or until top is
dry and springs back when
lightly touched. Invert pan
and cool cake completely,
about 2 hours.
lb remove: cut around sides
of cake with a sharp knife.
Pull out tube and run knife
around bottom. Place on
serving plater. Frost with
Mocha Glaze and decorate
with chocolate coffee beans.
Refrigerate for at least 30
minutes before serving.
Serves 12 to 16.
MOCHA GLAZE
6 oz semisweet chocolate
chips
6 tablespoons butter or
margarine
2 teaspoons instant coffee
1 /2 teaspoon cinnamon
2 tablespoons
confectioners sugar
In small, heavy bottomed
saucepan place chocolate
chips and butter or margar-
ine. Heat over low heat, stir-
ring often until melted and
combined. Remove from heat
and stir in coffee and cin-
namon. Sift in confectioners
sugar and mix well. Let cool
for 10 minutes until spread-
ing consistency. Spoon over
top of Mocha Angel Food
Cake, letting glaze run down
the sides. Place chocolate cof-
fee beans around top to
decorate. ❑

More Africans
To Renew Ties

Jerusalem — Three
African countries have
agreed to renew diplomatic
ties with Israel in conjunc-
tion with Ethiopia, and are
expected to announce their
decision soon, sources in
Jerusalem said.
Ethiopian envoy Kassa
Kabede told officials last
week that Addis Ababa had
agreed with the three coun-
tries — which he did not
name — that they would
renew ties shortly after
Ethiopia, which announced
its decision two weeks ago.
Foreign Ministry officials
said they expect two of the
more important African
countries — Nigeria and
Zambia — to be among the
three countries mentioned
by Kabede. Following such a
decision by Nigeria and
Zambia, Israel will have
renewed ties with most of
the major African states.
