CIDER SAUCE Remaining turkey bones and frame 1 yellow onion 2 tart apples 4 ribs celery 2 medium carrots 1 tablespoon thyme 1 bay leaf 1 cup kosher apple cider pan juices 2 tablespoons margarine Chop the turkey carcass in smaller pieces. Peel and chop onion and apples, dice carrot and celery. Brown the carcass with the vegetable and sea- soning. Cover with water (about 1/2 gallon, or to cover well). Bring to a boil and cook over medium heat uncovered, for two hours. When only two cups of the liquid remains, pour through a sieve to remove solids. In another pan, melt Y2 tablespoon margarine and add 1/2 tablespoon flour, stirr- ing. Add the liquid, cider and the reserved pan juices, bring to a boil. Adjust seasoning, add 2 tablespoons margarine. Cut the breast and thigh meat into neat slices, arrange on serving platter, and heat carefully with the stuffing, all covered with tin foil, in a 350 degree oven for about 15 minutes. Pour about half the hot sauce over, and offer the rest of the sauce separately. Serve with baked potatoes, crisp broccoli or green beans. TURKEY SALAD The meat you cut off the carcass before making broth or leftovers is put to good use in the following refreshing turkey salad. With a smooth taste from the avocado, the tang of the grapefruit, and the zip of onion, this turkey salad is a lovely, colorful ac- cent for an impromptu lunch or supper dish. Top with parve croutons if you wish, or browned slivered almonds for crunch. 1 large avocado 1 large grapefruit 1 red onion 1 head lettuce 1 to 2 cups cooked turkey meat 1 cup oil and vinegar dressing (1/2 kosher vinegar, % oil) or bottled kosher Italian dressing Arrange the lettuce on a platter or in a bowl, alternate avocade slices, grapefruit slices (cut the peel off the grapefruit in , a spiral to remove the pith as well as the peel, then cut the sections out by cutting downward on either side of the membrane) and thin slices of onion. Top with turkey and dress with the oil and vinegar. Fresh oranges may be used instead of the grapefruit. Serves 4. • The standard burger and loaf are no longer made ex- clusively from ground beef. By substituting ground turkey you can enjoy "beef- less" dishes and have the ad- ditional benefit of lower calories. TURKEY BURGERS 1 pound ground turkey 1/2 cup fresh bread crumbs 1 small onion, minced 1 teaspoon salt 1/8 teaspoon freshly ground pepper Combine all ingredients with Y4 cup water and mix well with your hands until smooth. Shape the mixture into 4-inch patties and place on a greased rack in the broiler pan. Broil 5 inches from the heat for about 6 minutes on each side. Serve on rolls or toasted English muffins. Serves 4. TURKEY LOAF 1 (one pound) loaf frozen bread dough 3 cups ground turkey 1 cup bread crumbs 3 /4 cup gravy 1 /2 onion, chopped Salt & pepper 2 tablespoons margarine, melted Let frozen dough thaw to room temperature 2Y2 to 3Y2 hours, or overnight in refrig- erator. Mix ingredients to- gether and shape into 6 equal patties approximately 4 inch- es in diameter. Cut thawed loaf into 6 equal pieces. On lightly floured board roll each piece into a circle approx- imately 6 inches in diameter. Wrap dough pieces around turkey. Fold ends over patty and seal. Place seam side down on lightly greased cookie sheet. Brush loaves with margarine. With sharp knife make small cuts in top of dough. Bake in 375 degree oven 20 to 25 minutes or un- til golden brown. Serves 6.
