FISH, A REAL HEART PLEASER

According to The American Heart Association Fish is a
heart pleaser, this is why:
• Fish is an excellent source of protein
• Fish is low in calories
• Fish is high in taste and variety
• Fish is low in saturated fat
• Fish is high in vitamins and minerals
COOKING FISH? KNOW THE TEN MINUTE RULE
Timing is all important when it comes to cooking fish.
Perfectly cooked fish is moist and has a delicate flavor;
overcooked fish is dry and tasteless. The "ten minute rule"
is still the best guide to cooking fish by conventional
methods. Here's how to use it:
1. Measure the fish at its thickest point. If the fish is stuffed
or rolled, measure it after stuffing or rolling and time it
accordingly.
2. Cook fish 10 minutes per inch, turning it halfway
through the cooking time. For example, a 1-inch fish
steak should be cooked 5 minutes on each side for a total
of 10 minutes. Pieces of fish less than 1/2 inch thick do
not have to be turned over.
3. Add 5 minutes to the total cooking time if you are
cooking the fish in foil, or if fish is cooked in a sauce.
Double the cooking time for frozen fish that has not
been defrosted.
HOW MUCH FISH SHOULD I BUY?
An average serving of fish is about three ounces. The
following is an estimated purchasing guide.
• Whole of round fish — 3/4 pound per person
• Dressed of cleaned fish —1/3 pound per person
• Filets and steaks —1/4 pound per person
