Cool and set aside. Just before

peeler or paring knife to cut
off the orange part of the
orange peel. Trim the peel in-
to 16 thin, 2 inch strips. Wrap
the peel around toothpicks to
curl it. Cut each peach in 4,
1 /4 inch thick slices. Brush
each with lime juice to pre-
vent discoloration. Mound 2
teaspoons of the cottage
cheese mixture on each peach

cups) cottage cheese
1 /2 cup sour cream
10 ounce jar strawberry
preserves
3 large eggs
1 /4 cup sugar
1 /4 cup flour
2 teaspoons vanilla
extract or 3/4 teaspoon
almond and 1
teaspoon vanilla
1 9" prepared graham
cracker crust
Step 1: Preheat oven to 350°
F. In blender, or food pro-
cessor, combine cottage
cheese, sour cream and I/2 jar
(1/2 cup) strawberry preserves.
Process at high speed until
smooth and creamy. Add eggs,
sugar, flour and flavoring.
Process on low speed until
smooth. Pour into prepared
crust. Bake 50 minutes or un-

AMBROSIA SALAD
1 pint strawberries
1 16 ounce container
cottage cheese
2 medium oranges
2 medium bananas
1 cup walnuts, chopped
1 /2 cup buttermilk
1 /4 cup honey
3 teaspoons shredded
coconut
Cut strawberries in half,
Peel and cut oranges into 1
inch chunks. Peel and slice
bananas into 1/2 inch rounds.
Place fruits and nuts in
medium bowl. In separate
bowl mix buttermilk and
honey. Pour over fruit and
gently toss. Cover and chill 1
hour. Divide cottage cheese
into 4 bowls. Spoon chilled
fruit over cottage cheese and
sprinkle with coconut. Yield:
4 servings.
