Drain well. Place in large pot with 5 cups cold water and bring to boil. Skim off any froth from sur- face. Add all remaining ingre- dients, except sausage. Cover and cook at simmer for 1 hour. Stir in sausage, cover and cook 1/2 hour longer. Ad- just seasoning. Serve hot. Serves 4 to 6. Place lettuce leaves in boil- ing water for 1 minute to blanch. Remove and refresh under cold running water. Drain on paper towels. In a medium sized bowl, mix breadcrumbs, ground beef, 1 egg, salt and pepper. Shape into 12 egg-sized balls. Place a ball on stem end of lettuce leaf and roll, tucking ends in like an envelope. Repeat with remaining lettuce and meat mixture. Lightly beat remain- ing egg. Dip lettuce rolls in beaten egg, then in matzo meal to cover, then beaten egg again. Heat about 'A cup oil in a large skillet. Quickly fry letfuce rolls over high heat, turning to brown all over. Lower heat and add broth and lemon juice. Cover and simmer for 45 minutes. Remove to serving dish. Reduce liquid in pan to about 1 /2 cup. Add tomatoes and basil and bring to boil. J CABBAGE AND LAMB CASSEROLE 1 small head green cabbage (about 1 1/2 pounds), shredded 1 onion, peeled and chopped 2 tablespoons oil 1 /4 cup tomato sauce 2 tablespoons water 1/2 teaspoon salt 11/2 teaspoons curry powder 4-6 thick slices roasted lamb paprika for garnish Preheat oven to 375F. In a large bowl, combine shredded cabbage and onion. In separate cup, mix oil, tomato sauce, water, salt and curry powder and pour over cab- bage. Stir to coat. In a 2 1/2 quart baking dish, place half the cabbage mixture. Arrange sliced lamb over and top with Lillian Yashinsky her retirement this week. Yashinsky's 21-year tenure included such responsibilities as coordinating the communi- ty calendar for all of metro- Detroit's Jewish organiza- tions and maintaining Coun- cil's member organization records.
