Using rotary beater, beat
egg whites until stiff but not
dry. Set aside. Beat egg yolks
with seasonings and fish
liquid. Fold in mashed fish,
matzo meal and chopped
parsley. Gently fold egg yolk
mixture into egg white.
Meanwhile, heat Nyafat in
9-inch skillet for 2 minutes
over medium heat. Add egg
mixture and cook 5 minutes
or until bottom of omelette is
golden brown. Slip omelette
in pan under low broiler heat
for 5 minutes to brown and
cook top of omelette. Turn out
onto heated platter. Cut into
wedge shapes to serve. Serves
4.

GEFILTE FISH SALAD
1 jar gefilte fish
1 egg
1 tbl. sugar
1% tsp. salt
► 1 tbl. prepared horseradish
1/8 tsp. paprika
1 tbl. lemon juice
3 /4 cup peanut oil
4 tbl. flour
6 thick slices tomato

!Lettuce cups
Drain fish stock into cup.
Remove and mash carrots.
Put egg, sugar, salt, horse-
) radish, paprika, lemon juice,
oil and carrots in a bowl. Put
flour in sauce pan, gradually
add fish stock, mixing until
smooth. Cook over low heat,
stirring until mixture thick-
' ens and comes to boil. Boil 2
L) minutes stirring constantly.
Remove from heat; add to egg
mixture. Beat with rotary
beater until well blended,
thick and creamy. Chill. Put
dressing in small container in
center of large platter. Ar-

Arrange hard cooked egg
around each portion of fish to
resemble petals of a flower.
Serves 6.

- POT ROAST
2 large onions, sliced
5 lb. brisket
2 cloves garlic
1 can tomato sauce with
mushrooms
Kosher salt and pepper to
taste
In a large pot place the
onions in a small amount of
water and simmer for five
minutes. Add the meat and
sprinkle with the garlic and
spices. Cook on all sides, cover
on low heat for one hour. Add
the tomato sauce, cover and
cook for two more hours or
until meat is tender. Serves 6.
