and knead until the dough is
smooth and elastic, about 10
to 15 minutes. Carefully add
more flour or water as
necessary. Form two balls and
let rest, covered, on the pastry
cloth for 7 minutes.
Shape each ball into a flat
loaf, about 6-inch in diameter.
Place on a baking sheet
which has been sprayed with
Pam and sprinkled with a lit-
tle cornmeal. Cover with a
dampened towel and let rise
until doubled in bulk, about
1 1/2 hours.
Preheat oven to 400
degrees. When the breads
have risen, prick them with a
fork 5 times in a decorative
manner. Paint each with the
beaten egg white and
sprinkle with sesame seeds, if
desired. Place in center shelf
of the oven and bake 12
minutes. Then lower to
temperature to 300 degrees
and bake 30 to 40 more
minutes. Remove and cool.
Makes 2 loaves.
SWEET CARROT SALAD
2 lb. carrots, peeled and
cut into s-inch
chunks
2 cloves garlic
% c. fresh lemon juice
2-6 tbsp. sugar (or honey),
depending on taste
1 tsp. cinnamon
1/2 c. fresh parsley,
chopped
1/2 tsp. cumin
1/2 tsp. paprika
Place the carrots and garlic
in a large pot. Add water
about halfway, and bring to a
boil. Simmer until barely
tender, about 10 minutes.
Drain and discard the garlic.
Place in serving dish. Com-
bine other ingredients and
pour over the carrots. Add
pinch of salt if desired. Serve
chilled or at room
temperature. Serves 8.
MARINATED BEET
SALAD
2 lb. whole beets, washed
and unpeeled
Moroccan-Style Low Oil-
Vinaigrette Dressing
Place whole, unpeeled beets
in a large pot. Fill halfway
with water. Bring to a boil,
cover and simmer until
tender, 30 to 45 minutes
depending on size of the beets.
Drain and peel. The skins
will come off easily. Slice thin-
ly and cover with vinaigrette
dressing. Serve chilled or at
room temperature. Serves 8.
