EAT HEARTY RECIPE SUBSTITUTIONS
You probably have quite a few favorite recipes that may not fit in-
to a heart-healthy diet program. Well, thanks to the American Heart
Association Low-fat, Low-cholesterol cookbook, here are some
substitutions that may help you to salvage some of your favorite
recipes:
*When your own recipe calls for Unsweetened Baking Chocolate:
USE Unsweetened cocoa powder or carob powder blended with un-
saturated oil or margarine (one 1-ounce square of chocolate = 3
tablespoons of cocoa or carob plus 1 tablespoon polyunsaturated oil
or margarine). Because carob is sweeter than cocoa, reduce the sugar
in the recipe by one fourth.
*When your recipe calls for Whole Milk: USE 1 cup of skim or non-
fat milk plus 1 tablespoon of unsaturated oil as a substitute for 1 cup
of whole milk.

Sour Cream Recipe:
2 Tablespoons skim milk
1 Tablespoon lemon juice
1 Cup lowfat cottage cheese
Place all ingredients in a blender and combine on medium-high
