4 lbs. flanken or stew
meat
4 large onions, chopped
4 hot chili peppers
1 tsp. salt
meat bones
1 pkg beans, white
Soak white beans over-
night. Cook bones for 1 hour,
add 2 cans tomato sauce,
flanken or stew meat, salt,
onions and peppers. Add
beans and cook until soft (ap-
proximately 2 hours). Add
water if it evaporates, but not
too much water. Serve with
spaghetti.

MOROCCAN CHICKEN
WITH OLIVES
(a la Solange Ensellem)
1 chicken (3 lbs.)
1 cup oil
6 cloves of garlic peeled
1/2 tsp. saffron
1/2 tsp. black pepper
1 lb olives pitted and
crushed
Juice of 1 lemon
Choose a chicken with firm
flesh, cut into pieces and
place in pan with oil, garlic,
saffron and black pepper.
Cover with 1/2 cup water and
cook 10 minutes over a low
heat. Add olives and lemon
juice. Cook in a half-covered
pan over medium heat for 30
to 35 minutes, adding more
water if necessary. Arrange
chicken and olives in a dish
and serve hot.

GREEK SFONGATO DE
PUERRO CON CARNE
(Leek and Meat
Casserole)
5 leeks, well washed
1 lb. ground meat
2 eggs
Oil, salt and pepper
Cut the leeks in the middle,
vertically, so as to wash well,
discarding most of the green
tops. (You can use some of the
more tender part). Boil the
leeks in water until tender.
Drain well, squeezing the
water out by hand.

In a meat grinder or food
processor, chop the leek very
fine. Mix the chopped leek
with the meat and the eggs,
using your hand. Add salt and
pepper. Generously oil a rec-
tangular pyrex dish and
spoon the leek and meat mix-
ture evenly. Bake at 350
degrees for about one hour or
until well baked. Serve
lukewarm.
Note: The same thing can be
done with cheese. It is then
called Sfongto De Puerro Con
Queso. Mix the leeks with 2
to 3 cups grated feta cheese,
or a mixture of feta and ched-
dar cheese, or feta and kaseri
cheese, but the feta should
always be the main cheese.
