here is nothing so
dynamic as a friendly
smile and a personal
greeting to entice customers
into a resaturant and get
them to return, writes
Charles Bernstein, editor of
Nation's Restaurant News .. .
"and there is no substitute for
a warm hello," says
Bernstein.
"In an era when repeat
business means everything to
restaurateurs, friendliness
and courtesy count extra.
They mean far more than all
the price-cutting and coupon-
ing in the world.
"A surly waiter or waitress
who has had a bad day takes
it out on the customers,"
writes Bernstein. "Or some-
one is seated near the kitchen
and requests for a better table
go unanswered. Or a phone
request for reservations is
greeted with an almost
derisive, 'We haven't got
anything:
"Contrast this with the
restaurant owner or manager
who always greets customers
by first name, cheerfully con-
verses with them at their
tables, and instills a sense of
friendliness and courtesy in
the entire. staff.
"Customers want to be
treated as if they were
special, whether in a fine-
dining establishment, steak
house, coffee shop, or any type
of food-service operation,
chain or independent. They
are tired of being treated
anonymously.
"It is noteworthy that when
people are called for their
tables after a long wait (at
restaurants that do not take
reservations), they are often
summoned by numbers. 'No.
76, your table is ready' is a
common refrain. This process
fosters anonymity, but most
individuals prefer to be call-
ed by their name or some
semblance thereof.
"Quality food and a win-
ning menu may be the ingre-
dients that initially attract
customers," says Bernstein,
"but friendly service and a
genuine smile will draw them
even more — and keep them
coming back."

EGGS NEVER had it so
good could be the slogan of
recently opened Le Peep at
former site of Jan Drake's and
Afternoon Delight on North-
western Highway and 14
Mile.
The creative concoctions of

eggs, eggbeaters, etc. has
made this a 73 store chain
with three in Michigan .. .
Birmingham, Ann Arbor and
now West Bloomfield . . .
They do what nobody would
think of doing with eggs or
substitutes . . . Another store
is expected to open early next
year at Haggerty and Eight
Mile in Novi.
Before the end of this year;
Le Peep's Ann Arbor and
West Bloomfield sites and two
in Toledo are expected to open
for dinner . . They presently
are open seven days a week,
7 a.in. to 2:30 p.m.
The French toast is one of
Le Peep's biggest sellers and
top favorites.

MARK
Steak Factory on Grand River
just east of Drake, in the
World Wide Center, is a
dream come true for Mark
and wife Michelle, who is six
months pregnant . . . Parents
are Fran and Ron White and
Phyllis and Don Soltz.

Telegraph and Nine Mile
store . . . Have to tell you
they're among the best we've
eaten . . . especially the round
one with its thin crust . . . and
generous toppings . . . Square
was a little too doughy but
quite tasty . . . I also liked the
fact that regardless how long
the pizzas stayed in my office,
they didn't become soggy .. .
and grease was very minimal
. . . The firm consistency of
both also was much
appreciated.
DON'T KNOW WHERE it
can be found, but one of the
best butter alternatives is
Proctor & Gambles Whirl .. .
It's a vegetable oil that tastes
like butter and is the only
butter alternative approved
by American Culinary
Federation.
