APRICOT SOUP
WITH RASPBERRIES
1/4 cup orange
marmalade
juice of 1 large lemon
11/2 cups apricot nectar
9-10 apricots, stones
removed and cut in
quarters
1/2 pint raspberries
Place marmalade and
lemon juice in small sauce-
pan. Warm over low heat to
melt marmalade. Pour into
blender jar and add apricot
nectar and apricots. Cover
and whirl at High until
smooth, about 15 seconds.
Pour into a bowl and chill.
Before serving, stir in rasp-
berries. Serves 4.

SHABBAT FRUIT SOUP
1/2 cup sweet red wine
(eg. concord grape)
1/2 cup currant jelly
3 cups apple juice
4 whole cloves or 1/4
teaspoond ground
cloves
2 tablespoons plus 2
teaspoons cornstarch
11/2 cups cherries,
halved and stoned
In saucepan, place wine,
currant jelly, 2 1/2 cups apple
juice and cloves. Stir and
warm over medium heat to
melt jelly. Remove from heat.
In small bowl, mix cornstarch
and remaining apple juice to
a smooth paste. Stir into wine
mixture and return to heat.
Bring to boil, stirring con-
stantly until thickened and
clear. Stir in cherries. Serves
6.

FRESH CORN AND
SPINACH BROTH
1 tablespoon vegetable
oil
1 medium onion, diced
1 cup fresh corn kernels
(from 2 ears corn)
4 cups chicken broth
2 cups spinach, finely
shredded
In saucepan, heat oil. Add
onion and cook until trans-
parent. Stir in corn and cook
over medium heat 2 minutes
longer. Add chicken broth and
bring to boil.Remove from
heat and stir in spinach.
Serve hot. Serves 4 to 6. ED
