The new dining concept
without too much deviation
from the traditional takes a
top notch person in the kit-
chen . . . This, Kurt and
Harry now have in Executive
Chef Gregory Krause,
graduate of the culinary arts
program at Oakland Corn-
munity College . . . and
previously with Oakland
Hills Country Club and
Grosse Pointe Yacht Club.
For the last year-and-a-half,
Gregory worked with
Seymour Guttman at his Irv-
ing's of Troy, making contem-
porary and traditional dishes
. . . There is no affiliation be-
tween the new Irving's and
Irving's of Troy . . . Gregory is
full time at the new Irving's
at La Mirage on North-
western in Southfield.
He is a whiz at various
freshly baked Wellington
dishes, phyllo dough stuffed
with seafood, poultry, etc. . . .
Gregory's quiches are win-
ners, too . . . seafood, broccoli,
Florentine, etc.
People today are much more
health conscious than ever
before . . . and with Chef
Gregory, the new Irving's is
able to handle this situation
. . . pasta primavera, pasta
Tichino, some California
pasta offerings, at least three
fresh seafood items each even-
ing, numerous salad creations
. . . plus being big on poultry
in both contemporary and tra-
ditional presentations.
Also new creations like
chicken breast stuffed with
brie cheese and brandied ap-
ples among other gourmet
delights.
Young Jodi Klein, a student
at University of Michigan,
taking hotel restaurant
management and journalism,
works at the new Irving's dur-
ing summertime . . . She
brought me dinner of a
wonderful broiled salmon
steak atop break crumbs .. .
with sliced pears and grapes
garnishing the plate . . . The
bread is double-baked and
hot.
With all the culinary
delights now at the new Irv-
ing's Deli-Restaurant, it con-
tinues to also maintain the
traditional homestyle cook-
ing and intention of Kurt and
Harry as a family restaurant.

tional things like stuffed cab-
bage, pickled trout, roast
