This is the careful path be- ing taken by owners Kurt Deeg and Harry Newman at the new Irving's Deli- Restaurant in La Mirage Mall, Northwestern Highway between 12 Mile and Inkster Road. The maintenance of a family atmosphere and character of a Jewish deli restaurant takes precedence over any thoughts of excessive alteration in dining at the new Irving's. It had previously been owned by Rose and Irving Guttman . . . who had moved to the northwest area after 10 years in Hamtramck and enjoyed a solid customer relationship. Kurt and Harry have been friends for many years .. . and when Harry heard about Irving's being for sale, he con- tacted Kurt, who has always wanted to have a restaurant in the states . . . Kurt is owner of Windsor's Ye Olde Steak House, which he open- ed in 1967, and L'Auberge, whose doors across the river Kurt opened in 1972 . . . He had previously been general manager of the Beach Grove Golf & Country Club in Windsor. Ye Olde Steak House and L'Auberge are today two of Windsor's favorite restaurants. Rose and Irving had the La Mirage site about three years, moving there from Greenfield and 11 Mile. As of Dec. 1, 1988, Kurt and Harry took over ownership. Seating 165 at tables and booths amidst beiges, browns, earthtones and subtle greens, the new Irving's is now something more than just a deli-restaurant . . . And it is with much credit that the place was eventually sold to people like Kurt and Harry. Harry is a highly respected businessman . . . and Kurt a very knowledgeable restaura- teur . . . When they took over, the menu remained as it was for a short while and then changed a bit . . . but always maintaining the character that Rose and Irving had built. Kurt's restaurant knowledge is wide . . . work- ing in the kitchen and cook- ing at his Windsor restaurants, Ye Olde Steak House and L'Auberge, when they opened . . . following much outstanding training. He graduated in 1952 from the Hotel School in Luasanne, Switzerland, among Europe's finest training schools, Ecole Hoteliere de Lausanne . . . after a three-year program of cooking, serving and restaurant management .. . plus a semester at Dolder Grand Hotel in Zurich, Switzerland, and another semester at the Park Hotel in Triberg, Germany . . . This is why Kurt and Harry have retained such Irving's stalwarts as Diane Zatorski, now assistant manager as well as an excellent waitper- son . . . her sister Ilene Onesko, popular with customers (both worked at Irving's back in Hamtramck) . . . Yetta Laxer, longtime Irv- ing's waitress of much ex- perience . . . Sue Barbato, for years at Irving's, working weekends . . . Kathy Abbott, day waitress. Lil Benkoff is still behind the cash register days from 9 to 3 . . . Eunice Palmer, who used to make me some of the best breakfasts I ever had, taught by Rose Guttman to do all the home cooking of stuff- ed cabbage, soup, pickled fish, gefilte fish and other Jewish traditional items . . . Deli men Lance Farkas and Tony Hendrix. Angi Drallos left Stafford's on Coolidge and went to work as a waitperson for Rose and Irving on Greenfield . . . re- maining a standby for 12 years . . . Betty Guyzik also started on Greenfield and was with Rose and Irving 12 years
