QUICK PICKLED MUSHROOMS 1 pound fresh mushrooms, quartered 1 cup dry white wine 1 teaspoon sugar 1/2 teaspoon oregano 1/4 teaspoon salt pinch pepper 2 tomatoes, cut in thick wedges Place mushrooms, wine, sugar, oregano, salt and pep- per in saucepan. Cook, cov- ered, over medium heat for 7 minutes until mushrooms are slightly cooked. Add tomatoes and cook 2 to 3 minutes longer. Spoon into a bowl and refrigerate. Note: mushrooms and tomatoes should be cut in large enough chunks to be eaten with fingers or toothpick. CHINESE SLAW 8 cups shredded Chinese cabbage (1 small head) 11/2 cups prepared citrus sections 1/4 cup snipped chives '/2 cup reduced calorie mayonnaise 2 tablespoons sugar 1 teaspoon ground ginger juice of 2 lemons Place cabbage in a large bowl. Gently stir in citrus sec- tions. In separate small bowl, combine chives, mayonnaise, sugar, ginger and lemon juice. Pour over cabbage mixture and toss lightly. Refrigerate. Will keep for 2 to 3 days, tightly covered, under refrigeration. STRAWBERRY SORBET 2 quarts strawberries 11/2 cups sugar juice of 3 oranges juice and grated rind of 3 lemons '/4 cup brandy (optional) Puree strawberries with sugar, orange juice and lemon juice and rind in food pro- cessor or blender. Add brandy and pour into freezer trays. Freeze until mixture is par- tially frozen. Transfer to large bowl and beat until mushy. Return to trays, cover and freeze until firm. Makes about 1 quart. BANANA CAROB STICKS 3 tablespoons fruit juice 'Al cup carob powder 1/2 teaspoon cinnamon 3 bananas, peeled about 1/3 cup chopped nuts Line a cookie sheet with wax paper. Mix fruit juice, carob powder and cinnamon to a smooth paste. Cut each banana in half; then cut each half into 4 sticks, lengthwise. Using a fork or tongs, dip each stick into carob paste, coating well all over. Sprinkle with chopped nuts and place on prepared cookie sheet and freeze. When they are partial- ly frozen, insert a sandwich pick in each stick and cover with plastic wrap. Return to freezer to freeze completely. May then be stored in a plastic bag. All Rights Reserved NEWS) Defense Attorneys Strike Military Courts Jerusalem (JTA) — Israeli and Palestinian defense at- torneys declared a one-month strike last week to protest what they charged were in- tolerable conditions in the military courts of the West Bank and Gaza Strip. The lawyers said the "in- dignity imposed on our clients" made it impossible to give them a proper defense and that they, too, were being harassed. The strike was promptly de- nounced by Brig. Gen. Amnon Strasnow, the judge advocate general who is the chief legal officer of the Israel Defense Force. He called it a most serious, irresponsible and completely unjustified step and said the courts would continue to con- duct hearings in a legal man- ner without the attorneys. Strasnow said that since the Palestinian uprising began 19 months ago, and especially in recent months, there has been real improve- ment in the work of the military courts in the territories. The number of judges has doubled, the trials are quicker and the working con- ditions of the lawyers have improved, he said. But the lawyers charged that despite the IDF's pro- mises, Palestinian lawyers are still harassed in court, are often denied access to their clients and are not informed of changes in the court calendar.
