Recipes
OVERSIZE BURGERS
3 pounds lean ground beef
1 teaspoon salt
1/2 teaspoon pepper
8 hamburger buns, split
and lightly toasted.
Combine ground beef, salt
and pepper, Don't handle beef
too much or hamburgers will
be tight and dense. Divide in-
to 8 portions and shape. Place
on wire rack over preheated
coals and grill 8 minutes for
rare, 12 minutes for medium
and 16 minutes for well done,
turning once or twice. Serve
on toasted buns and let
everyone add the condiments
they desire.
ALL AMERICAN
BARBEQUE SAUCE
1 1/4 cups catsup
1 /4 cup Worcestershire sauce
1 /4 cup cider vinegar
1 /4 cup brown sugar
dash red pepper sauce
Place all ingredients in
saucepan and stir to mix.
Bring to simmer and cook for
10 minutes until slightly
thickened. Cool, cover tightly.
May be refrigerated for up to
7 days. Makes about 11/2 cups.
Variation: Plum Sauce: 1
cup coarsely chopped plums
and 2 teaspoons curry powder
may be added. Cook as above.
GRILLED SEA TROUT
WITH LEMON
WALNUT SAUCE
Lemon Walnut Sauce:
'/2 cup toasted walnuts,
finely chopped
1/2 cup margarine, melted
juice and grated rind of 1
large lemon
4 pounds sea trout, filleted
(may be in several
pieces)
Prepare
sauce:
Mix
together walnuts, melted
margarine and lemon juice
and rind. Rinse and pat dry
fish. Brush with sauce mix-
ture and place on preheated
