PUDDING
1 cup low fat or skim milk
1 tablespoon plus 2
teaspoons long grain
rice (not instant)
1 tablespoon sugar or to
taste
1 /4 teaspoon vanilla extract
1 /4 teaspoon cinnamon
V4 cup raisins
When I think of the life we've built together,
trusting one another through both good and
trying times, I fall in love with you all over
again.
Place milk, rice, sugar,
vanilla and cinnamon in top
of a double boiler. Mix well,
cover and cook over simmer-
ing water for 40 minutes or
until rice is tender. Stir often.
Stir in raisins and adjust
sweetness. Serve warm with
a little extra low fat milk if
desired. Makes 1 large serv-
ing.

Preheat broiler. Wash fish
and pat dry with paper
towels. Place on broiling rack.
In a cup, combine lemon juice,
mustard and garlic and spoon
over fish, spreading over en-
tire surface. Place under
preheated broiler and cook 5
to 6 inches from heat for 10
minutes or until fish is
opaque in center, (may take
less time depending on
thickness).
While fish is cooking, com-
bine all Salsa ingredients.
Mix well. Serve fish hot with
Tomato and Corn Salsa on
side.

Spread bottom of sponge
shells with preserves. Mix
ricotta, almond flavoring and
lemon rind and divide be-
tween shells. Lightly press 5
to 6 fresh raspberries into
cheesemixture and sprinkle
with grated chocolate. Serves
