because they are about the
only food which does not have
to be licensed by the rab-
binate as "kosher lePesach"
— fit for Passover use (though,
no doubt, that will come),
which does not, of course,
mean that all eggs are kosher.
One blood-spot renders an egg
unfit for Jewish consumption.
We once had a very obser-
vant relative staying with us
who thought she saw
something which, if examin-
ed under an electronic
microscope, might have prov-
ed to be a blood-spot, and
threw out half the eggs she
cracked. By the time she had
finished, I nearly cracked her.
I understand that the
chance of coming down with
salmonella poisoning from
eating an egg is about one in
200 million. If one eats 100
eggs over Passover, the
chances are reduced to one in
two million. The chances of
coming down with matzah
poisoning, I would say, are
rather greater.
The egg has an established
place in Jewish lore and gives
its name to an entire volume
of the Talmud which is called
Egg — not Good Egg, or Bad
Egg, but simply Egg, and
which must be about the
shortest title in all literature.
A hard-boiled egg is also,
traditionally, the first food
one eats on returning from a
funeral. I am not sure why
the eggs should have become
a symbol of mourning.
Perhaps our rabbis knew
something about salmonella
poisoning which we don't,
hence their insistence on hav-
ing the eggs hard-boiled.
I am saddened by the
doubts cast on this most
benign and versatile of foods.
When I was a child, eggs were
not only considered good for
you, but were thought of as an
actual health food and they
formed the basis of a whole
host of home-brewed
medicines. Strange how the
elixirs of one generation
become the health-hazards of
another.
