2 tsps. margarine
4 large eggs
1 cup imitation non-dairy
sour cream (30 calories
per tablespoon)
3 tbsps. plus 1 tsp.
granulated sugar
1/4
tsp. each ground cin-
namon and nutmeg
1 small apple, cored and
diced
2 tbsps. golden raisins
1 cup quartered drained
canned apricots**
2 tsps. firmly packed light
brown sugar
Preheat oven to 350 degrees
F. Spray a 1 1/2 to 2-quart
round casserole with nonstick
spray. In medium bowl, mix
farfel with % cup warm
water; set aside while you
prepare other ingredients. In
small suace pan, melt
margarine. Scrape into large
bowl; let cool, than add eggs,
imitation sour cream,
granulated sugar and spices.
Stir in soaked farfel, apple
and raisins. Scrape evenly in-
to prepared casserole. Evenly
arrange apricots on top.
Sprinkle surface evenly with
the brown sugar and the
reserved 1 tbsp. farfel. Bake
40-50 minutes, until slightly
puffed and set. Cook on rack
a few minutes before cutting
into equal wedges. Yield:
Eight servings.
* Matzah farfel is coarsely
crushed matzah crackers,
available at Passover time.
* If juice or water-packed
canned apricots are not
available, substitute canned
peaches or pears.
Note: Kugel may be
prepared in advance and cool-
ed to room temperature.
Cover with foil and reheat in
300 degree F oven before
serving.
