Recipes For Passover
Savory Potato Stuffing
cup diced onion
/2 cup diced celery
3 tablespoons pareve
margarine or chicken
fat.
One package of
potato pancake mix
1 egg
1 cup water
2 tablespoons matzo meal
teaspoon salt
Dash of pepper
Saute onion and celery in the fat until
onion is tender. Combine potato pancake
mix as directed on package. When thicken-
ed, stir in sauteed vegetables, matzo meal,
salt, and pepper. Use to stuff a large
chicken. Roast as usual.
