For the next few weeks I will be including Passover recipes for you, and I hope these
recipes help expand your menu choices this Passover. I would like to thank Ann
Baruch for sharing these recipes with all of us.
Honey-Spiced Sweet Potatoes
3 Pounds sweet potatoes (8 medium)
1/4 cup Pareve margarine, melted
(1/2 stick) 3/4 teaspoon Cinnamon
114 teaspoon ginger
Cook potatoes until tender; peel; cut into 112 inch slices. Combine margarine,
honey, cinnamon, and ginger. Arrange layers of potatoes in a greased 1-1/2 quart
baking dish, pouring some of the honey mixture
on each layer. Bake at 350 for 40 minutes or un-
til glazed, basting occasionally. Serves 6-8.
