you can order the figures with your
faces:'
To Beranbaum, it is inconceivable
to have a wedding without a wedding
cake, "even if the wedding isn't
elaborate," she says. "The way I look
at it, the wedding cake is like the
wedding gown. You don't wear the
gown again, and you eat the cake —
they're both one-time. But they're
symbols of the wedding."
Although she has various
recommendations on how to get the
best cake for your wedding, baking it
yourself is not one of them. No matter
how accomplished a baker you are,
"this is an emotional time in people's
lives. It's not a great idea to try to bake
your own cake:" Indeed, she notes,
"it's even pretty ambitious to try to
make your own daughter's wedding
cake."
Instead, if there is a custom baker
in your area whom you want to use,
Beranbaum suggests contacting him
or her as soon as you begin to plan
the wedding. If you are ordering the
cake from a bakery, the same time
frame prevails.
"In large bakeries, you can taste
the base cake they use," she says. "If
you're going to a custom baker, buy
a sample cake:' Alternatively, some
custom bakers are willing to use
recipes from her book.
If the caterer is taking care of the
cake, Beranbaum suggests discussing
in detail what you want. "Some
caterers are willing to do something
special," she says. "If you have
something special in mind, ask:' If you
meet resistance, she adds, it's been
her experience that "people can often
get what they want if they are willing
to pay for it.
When you serve the cake at the
wedding, the tradition of saving the
upper tier is no longer in vogue. Nor
are guests given little boxes with
pieces of wedding cake to take home
as mementoes. "Now," says
Beranbaum, "they cut up the entire
cake and serve it. And people care
how the cake tastes, not just how it
looks:
