Now, experts suggest that people don't just cut mold off, but throw the food away. Molds produce spores that go deep into the food, so even without the moldy spot, the food might still be tainted. Mold in bleu cheese and similar cheeses is specifically cultured to be harmless to humans. As a final precaution, some home cooks could change their shopping habits to im- prove on safety. They should select the dairy products, eggs, meat and frozen food last; then go directly home and refrigerate perishables. These precautions are es- sential if there are young children or elderly people living in the household. In particular, children, because their bodies are so much smaller, are very sensitive to toxins in food. Often, it is difficult to con- vince parents that a child is suffering a reaction to food toxins and is not reacting to food additives. There is no question that children do have food allergies. They also tend to be particularly sen- sitive to certain food additives like sulfites and some preser- vatives such as BTH, a com- mon mold inhibitor. However, recent studies debate the theory that hyper- activity is exacerbated in children who consume food containing additives. After 20 years, researchers are ques- tioning whether the so-called additive-free Feingold Diet really helps hyperactive chil- dren. Some studies indicate that it is the close supervision and one-on-one contact be- tween the child and caregiver that really causes the im- provement in the hyperactive condition.
