unbleached white
flour
% cup whole wheat flour
1 /4 cup instant nonfat dry
milk powder
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. ground cinnamon
1 /2 tsp. ground mace
1 small, well-washed thin-
skinned juice orange,
seeded and cut into
eighths (but not
peeled)
1 medium-sized carrot,
cut into 1-inch pieces
1 /2 cup sugar
2 tbsps. vegetable oil
1 /2 cup water
1 large egg
1 tsp. vanilla extract
1 /3 cup very coarsely
chopped pitted dates

Combine the flours, milk
powder, baking soda, baking
powder, cinnamon, and mace
in a medium-sized bowl. Stir
until thoroughly mixed and
set aside.
Place all the remaining in-
gredients except the dates in
a blender container or food
processor bowl. Blend on
medium speed or process for
30 seconds. Scrape down the
container sides or processor
bowl, and blend or process for
1 minute longer, or until the
mixture is completely pureed
and smooth.
With the blender or pro-
cessor motor running, add the
dates to the pureed mixture.
Process for about 15 seconds,
or until the dates are finely
chopped. Pour the pureed
mixture into the dry ingre-
dients and stir only until the
dry ingredients are moist-
ened.
Lightly oil 12 medium-size
muffin tins, or spray them
with nonstick vegetable
spray, or fit with paper liners.
Divide the mixture evenly
among the cups. Bake in a
preheated 400-degree oven for
20 to 25 minutes or until the
muffins are lightly browned
and the tops are springy to
the touch. Serve warm or at
room temperature. Makes 12
muffins.

MUFFINS
Because oat bran has got-
ten such good press lately as
a dietary means to help lower
cholesterol, people have been
asking for recipes that use it.
In response to such a request,
the Tufts University "Diet &
Nutrition Letter," an ex-
cellent monthly newsletter,
recently provided the follow-
ing recipe, which I have
adapted.
Note: Oat bran is available
in most supermarkets and
health food stores.)
