lower in fat than the beef
used in comparable products.
In the early 1980s, Empire
took another major step in
modern kosher processing
when it incorporated its own
hatchery and feed mill to bet-
ter control the quality and
special standards of poultry
raised specifically to the
restrictions of kashrut. In so
doing, the company became
the first and only totally in-
tegrated kosher poultry pro-
ducer and processor in the
United States.
Only natural grains are fed
to the poultry, with none of
the growth stimulants or ar-
tificial ingredients that are so
prevalent in most of the coun-
try's poultry houses. And,
Empire proudly points out
that its birds are free-
roaming, not caged, and given
16 percent more living space
than the industry average.
In following the laws of
kashrut, only cold water
(which retards bacterial
growth) is used during pro-
cessing. Also, to avoid injury
or bruising which would
make the poultry trayfe, most
of the processing is done by
hand.
My mother has always in-
sisted that "Kosher chicken
tastes best," and interesting-
ly I've been finding that
many non-Jews concur. Em-
pire — the largest kosher
poultry processor in the world
— has done an important ser-
vice not merely in providing
tasty poultry and other
kosher foods, but in making it
easier for America's Jews to
observe kashrut.
