honey in warm water. The
water should be very warm,
around 115 degrees. Add the
yeast.
when the yeast is bubbling,
mix in the egg substitute,
melted margarine, spices, salt
and lemon juice. Add 2 cups
flour, and beat with a wooden
spoon until the mixture is
smooth. Add the remaining
ingredients with enough
more of the flour so that the
mixture becomes thick and
leaves the sides of the bowl,
about 21/2 cups.

Rub 1 cup flour into your
pastry cloth. Scrape the bat-
ter out from the bowl onto the
cloth. Knead the dough
through the pastry cloth. This
prevents adding too much
flour which makes the finish-
ed bread too heavy. Knead
about 10 minutes in all, un-
til the bread is smooth and
elastic.
Wash and dry the mixing
bowl. Spray the inside of the
bowl with Pam or wipe it with
a margarine wrapper. Place
the kneaded dough inside,
turning once so the top is a
little oiled. Cover with a
damp cloth. Let rise in a
warm place, free from drafts,
until doubled in bulk (about
1 to 11/2 hours).
Punch the dough down.
Divide into three parts. Spray
three 1-lb. coffee cans with
Pam or grease with a little
margarine. Knead and shape
so the dough fits into the cof-
fee cans. Place the dough in
the cans and let it rise again
until it comes up over the top
of the can (about 1 hour). Be
patient. Sometimes it does
take longer.
Bake at 350 degrees in the
lower part of the oven for
40-45 minutes. If the tops
starts to get too brown, cover
lightly with aluminum foil
part way through the baking.
Cool on wire racks. Remove
from the coffee cans after
about 15 minutes. When the
coffee cakes are completely
cooled, you may store them in
the cans. Frost if desired.

FROSTING
1 cup powdered sugar
1/2 tbsp. non-fat milk, or as
necessary
1 tsp. vanilla
Combine ingredients in a
small bowl. Beat with a wire
whisk until smooth. Drizzle
over the tops of the coffee
cakes after the cakes have
cooled. Do not frost any coffee
cakes that you intend to
freeze because if you have to
defrost them in the oven, the
melted frosting makes a
mess.
