with a few mint sprigs.

YOLKLESS OMELET
8 egg whites
butter-flavored Pam for
frying
% to 1 c. prepared filling
Have all ingredients at
room temperature. For best
results, do not use eggs direct-
ly from the refrigerator. In a
medium bowl, beat the egg
whites with a wire whisk.
Beat just until the whites
combine. Do not let the
whites get too frothy. Fold in
the prepared filling. Season
the filling but do not salt the
egg whites or they will
become tough.
Spray a non-stick frying
pan with a thin coating of
butter-flavored Pam. Slowly
heat the pan. When the pan
is hot, add the egg white mix-
ture all at once. Lower the
temperature. When the egg
white has cooked evenly, fold
the omelet over and serve at
once. Be careful not to over-
cook. Serves 4.

LOX AND DILL FILLING
4 ox. lox, chopped
% tbsp. fresh dill, chopped
Pam for frying
1 tbsp. margarine
1 tbsp. finely chopped
green onion
1 tbsp. finely chopped
fresh parsley
Spray a small non-stick fry-
ing pan with Pam. Melt the
margarine. Saute the green
onion and parsley just until
they have wilted and given off
some liquid. Cook until this
liquid evaporates. Turn off
the heat. Cool slightly. Add
the chopped smoked salmon
and dill to the egg whites.
Then add the cooked onions
and parsley. Combine and
cook as directed.

SPINACH,
MUSHROOM FILLING
4 oz. fresh mushrooms,
washed and thinly sliced
1 tbsp. margarine
Pam for frying
salt and freshly ground
pepper to taste
% tbsp. chopped fresh basil
about 20 large, washed,
dried and destemmed
spinach
Spray a medium non-stick
frying pan with Pam. Melt
the margarine and add the
sliced mushrooms. Season
with salt and pepper. Cook
until the mushrooms give off
their liquid. Continue cook-
ing until the liquid
evaporates. Turn off the heat.
Cool slightly. Combine with
the egg whites. Cook the
omelet as directed. Before you
fold the omelet over, cover
one-half with the fresh
