Since nearly 80 percent of the
calories in egg yolks come
from fat, it's no dietary loss to
anyone to throw them away!
On the other hand, the whites
supply most of the egg's pro-
tein and provide no fat or
cholesterol whatever. So, if
you make your omeletthis
way, you'll offer something
that has no cholesterol, is
very low in fat, and is quite
delicious. Fry it in butter-
flavored Pam instead of
margarine.
In like manner, you can
prepare a cream cheese
substitue to spread on your
bagels that is low in fat and
cholesterol and tastes like ex-
pensive French-style cream
cheese spreads. Beat farmer
cheese with a little non-fat
milk. Flavor it with a variety
of herbs, garlic and green
onions. Your family will cheer
the results!
A tossed green salad of your
choice rounds out your menu
for breaking the fast.
However, instead of dressing
it with your regular salad
dressing, try the Low-Oil
Vinaigrette that follows. It is
a tasty combination of herbs
and spices that has the addi-
tional benefit of replacing
one-third of the oil you might
usually use with water to
reduce fat and calories even
more. Allow 1 tablespoon of
dressing per person.
You need not avoid coffee
cake either. Save up the
margarine you didn't spread
on your bagel for this part of
the menu, especially if you're
trying to restrict your fat in-
take to 20 percent or less of
your total calories. The rest of
this menu has little or no fat,
so the amount consumed here
does not threaten the overall
picture. Either make your
usual sweet roll dough replac-
ing the eggs in that recipe
with one of the egg substi-
tutes readily available, or use
the use the tried and true
recipe for No-Cholesterol Cof-
fee Cake Baked in Coffee
Cans. This recipe is beautiful
to look at, delicious to eat,
and has the additional benefit
of being almost foolproof.
Make this the day before and
then store the cakes (the
recipe makes three small
loaves) in the cans so they
won't get stale. You can freeze
the leftovers if you don't want
your family to succumb to
temptation. This way, you'll
be all ready for the next occa-
sion or for unexpected guests.
Decorate your table with a
colorful fruit boat. Hollow out
a pineapple half. Fill it with
a mixture of sliced bananas,
pineapple, and chilled man-
darin orange sections. Flavor
