does not taste sweet enough,
add more honey diluted in
orange juice. If you feel there
is too much liquid, remove the
cover and bake a while longer,
about Y2 hour. Makes 8-10
servings.

STEAMED
ARTICHOKES
8-10 medium artichokes
(or allow one per
person)
1/2 cup honey
1/2 tsp. salt
1/2 cup white viengar
3 tbsps. prepared
mustard, like Dijon
(French's)
3 /4 cup safflower oil
3 /4 cup water
Combine honey, salt,
vinegar, mustard, oil, and
water in blender or large jar.
Blend until combined.
Refrigerate until ready to use.
Maes 2 cups, enough for 2-3
tbsps. per person.
Steam artichokes in water
seasoned with salt, a little
safflower oil juice of 1/2 lemon
and pressed garlic cloves to
taste.
When cool, remove the this-
tle. Serve either hot or at
room temperature, with the
Low-Cholesterol Honey
Dressing available for dipp-
ing. Serves 8-10.
LOW-CHOLESTEROL
HONEY CAKE
1 carton egg substitute
(the equivalent of 4
eggs)
1/2 cup warm coffee
1 cup sugar
1 cup honey
2 tbsps. safflower oil
31/2 cups flour
11/2 tsp. baking powder
1 tsp baking soda
1 /4 tsp. ground cloves
1 /2 tsp. allspice
1 tsp. cinnamon
1/2 cup raisins
1 tbsp. grated orange
peel
2 tbsps. brandy or coffee
liqueur
Beat eggs, adding sugar
gradually until the mixture is
very light. Dilute the honey
in the coffee. Add this to the
egg mixtue along with the oil.
Combine the dry ingre-
dients in another bowl. Add
the raisins. Add this gradual-
ly to the egg mixture. Stir un-
til well combined. Then add
the orange peel and brandy or
liqueur.
Preheat your oven to 325
degrees. Spray a tube pan
with Pam. Line the bottom
with waxed paper. Bake for 1

hour or until a wooden pick
comes out clean. Remove the
waxed paper before the cake
is entirely cool. Serves 16.
