An Unlikely Taste 'Tireat At Armando's Shalimar DANNY RASKIN Local Columnist A very interesting con- cept . . . very unlikely anywhere . .. the com- bination of authentic Mex- ican and authentic Northern India cuisines. This is the new Armando's Shalimar now on Orchard Lake Rd. between 12 and 13 Mile. Armando's Galan's Mexican food has received much note . . . and is a favorite of the Detroit Tigers, TV per- sonalities and persons from varied walks of life. His new partners are Pam and Paul Baluja . . . and Jeet Reen, probably among the finest finest Northern India chefs in the area. There's even an India "Tor- tilla" that looks like a burrito . . . and is made with whole wheat . . . It's called Chopata . . . among six or seven breads baked on the premises by Jeet. Food of India is very healthy . . . nothing canned or processed . . . Armando's Shalimar makes its own yogurt, own cheese, own ap- petizers like Samosa, minced lamb and peas roll . . . Pakora, eggplant, cauliflower, cheese and fish . . . etc. Its chicken (Andoori) is cooked without skin and marinated overnight. Also in the kitchen with Jeet is Chef Kashri Ram, whose specialty is the Tan- doori cooking in Armando's Shalimar open kitchen sector. In the evenings are tablecloths . . . and fresh In- dia "tortillas" are brought direct from the authentic clay oven. Food of India is not hot as erroneously thought by many . . . It depends on how spicy a person wants his choices .. . The tasty delights can be had mild, medium or spicy .. . whichever suits a person's palate . . . or stomach. Bangladesh food is general- ly considered more spicy .. . Northern India cuisine is much different . . . many dishes made with yogurt .. . Jeet and his staff use fresh ginger, garlic, tomatoes, cilan- tro, curry and when necessary, hot sauce. Paul and Pam were the ' original owners of Peacock Restaurant in Dearborn .. . where Jeet was chef cooking all those wonderful dishes that drew so many rave notices. The luncheon buffet, 11 a.m. to 2:30 p.m., combines both Mexican and Northern India food . . . Dinners also, of course . . . A Sunday brunch is expected to begin soon 11 a.m. to 3 p.m. . . . also with - both types of dishes. Armando is back in the kit- chen again . . . making his Mexican specialties . . . When he is not there, its food lacks much . . . Armando's Mexican artistry takes on an altogether different tastebud delight. Good Northern India restaurants are famous for their rice pudding . . . Arman- do's Shalimar cooks its rice four hours and serves the delicacy with pistachio nuts and raisins.
