restaurant is somewhat of a
dream that owner/chef Keith
Famie has had for some time
. .. while executive chef at
Chez Raphael in Novi, which
- he left in February of this
year after six years . . .
Washington Square Plaza,
owned by J.W. Hanna, is home
of the Royal Oak Music
Theater . . . and a 60-year-old
historical building.
Les Auteurs seats 110 and
brings a vivid new style with
simplicity and preparedness
of American cuisine . . . Les
Auteurs (which means the
authors) represents a collec-
tion of culinary fare from
Keith's travels and ex-
periences in the food industry
. . . Periodically, Les Auteurs'
menu features dishes from
the menus of many culinary
greats . . . interpreted by
Keith in the style that has
gained him much recognition.
The menu reflects a trend
towards healthy, fresh and
imaginative entrees like ..
calzone of lobster with sweet
peppers and mozzerella
cheese, flavored with garlic
and basil; grilled El-Bo Farms
pheasant with roasted
shiitake mushrooms, carrots
and onions, served on a bed of
steamed savoy cabbage with
garlic, olive oil and fresh
chives; fettucine of red pepper
and squid ink with grilled sea
scallops and a jalepeno
tomato relish; braised shank
of lamb with garden
vegetables and boiled
potatoes with rosemary.
Keith's decision on a bistro-
style restaurant with an open
kitchen was confirmed by
research trips to the West
Coast, New York and Chicago
. . . assuring his feelings that
customers enjoy the informal,
high-energy atmosphere pro-
jected by a bistro restaurant.
Everything is homemade
. . . The house bread is potato
poppyseed and most delicious
. . . At all tables are long,
spicy breadsticks for folks to
munch on while awaiting
their orders.
Les Auteurs opened its
doors on May 16 of this year
. . . and is already serving 400

to 500 meals a day . . .
French, Italian and American
food . . . During lunch or din-
ner, people from all walks of
life seem to know each other
in the informal dining sur-
roundings of Les Auteurs.
Our afternoon waitress,
Allison Zimmerman, is
highly personable . . . and
very efficient . . . She rattles
off specials without reading
from a card . . . and laughing-
ly says the luscious-looking
homemade desserts on her
cart are "de-calorized if not
swallowed."
She brought Simone Vitale
and me cold, crisp salads .. .
I had the rotisserie chicken

and Simone ordered the grill-
ed breast of chicken . . . In the
short time it has been open,
Les Auteurs is already among
the leaders in chickens used.
White tablecloths- are
covered with white paper .. .
and a cup of colored crayons

Detroit's top jazz talents in a
club concert setting . . . Live
jazz midweek and after work
had returned to downtown

Franklin and Riopelle . . .
This Wednesday is Orange
Lake Drive, Trinidad Tripoli
Steel Band Aug. 10, the Michi
Braden All Female Jazz Band
Aug. 17 and Alexander Zonjic
Aug. 24.
Since P-Jazz at the Pont-
chartrain Hotel is not going
to be held, this could fill
somewhat of a void . . . Every
Wednesday will be two shows,
7 p.m. and 10 p.m. . . . $7 in
advance admission . . . and $8
at the door.
Aug. 7 will be the inaugura-
tion of Sunday brunch, 10
a.m. to 2 p.m. at Les Auteurs.
Keith was recently
nominated by restaurant food
critics of this area to compete
in the prestigious American
Culinary Gold Cup Bocuse
D'Or sponsored by the
Chicago chapter of Le Vatel
CLub, oldest and most
distinguished association of
French-speaking chefs in
America.
Held in Chicago Sept.
18-19, it will select the best
American chef to represent
the U.S. in the Bocuse D'Or
international cooking corn-
petition at Salon des Metiers
de Bouche in January 1989 at
Lyons, France . . . The event
is an equivalent of the Na-
tional Restaurant Association
convention held annually in
Chicago . . . and an interna-
tional melting pot for chefs to
prepare foods in the manner
and style that is represen-
tative of their country.
Three chefs from each area
are nominated . . . and asked
to submit lamb and lobster
recipes and color slides of the
entry . . . 16 candidates will
be selected to demonstrate his
or her reicpes Sept. 18 at
Chicago's Ambria Restau-
rant, and Sept. 19 at Le Fran-
cais in Wheeling, Ill. . . . A
special awards ceremony is on
the 19th Chicago's Ritz
Carlton, the winner's gold
cup valued at $5,000 . . . In
January, the awardee
represents the United States
in France . . . all expenses
paid.
Not bad for someone who
once was a broiler cooklap-
prentice at the former Great
Dane on Northwestern . . . go-
ing on to apprenticeships at
Hyatt Regency in Brussels
and Monte Carlo to day chef
at Jacques, to chef at the
Benchmark of Michigan Inn
to chef in Sabre Room of
Hilcrest Country Club (now
Thomas' Crystal Gardens) to
cook at the Michael Geurard
