Cut the fruit into 1-inch chunks. In a 2- or 3-quart pot, combine all the ingredients. Bring to a boil, reduce the heat to a gentle boil, and cook, covered, for 1 hour, stir- ring occasionally. When the fruit is tender and the mix- ture is thickened, the chutney is ready. If there is too much liquid, remove the cover and boil away some of the liquid, taking care not to burn the fruit. Remove the ginger root before serving. Serve hot, warm, or chilled. Leftovers will keep in the refrigerator for at least a week.
