1 /2 cup light or dark, raisins
1 to 3 slices (1 inch thick)
ginger root
2 cloves garlic, minced
1 /4 cup firmly packed light
or dark brown sugar
1/2 teaspoon each ground
cumin and coriander
1 /4 teaspoon each ground
cloves,
cinnamon, and cardamom
Dash to 1 teaspoon ground
cayenne pepper
% cup distilled white
vinegar
Core the apples and remove
the pits from the nectarines
and plums, but do not peel the
fruit. Cut the fruit into 1-inch
chunks. In a 2- or 3-quart pot,
combine all the ingredients.
Bring to a boil, reduce the
heat to a gentle boil, and
cook, covered, for 1 hour, stir-
ring occasionally. When the
fruit is tender and the mix-
ture is thickened, the chutney
is ready. If there is too much
liquid, remove the cover and
boil away some of the liquid,
taking care not to burn the
fruit. Remove the ginger root
before serving. Serve hot,
warm, or chilled. Leftovers
will keep in the refrigerator
for at least a week. Although
the chutney can be frozen,
there may be changes in the
consistency.
