T

he way to a man's
heart, as the saying
goes, is through his
stomach. So what better food
for a good spouse to start with
than a good dessert? Here are
six rich-and-famous-but-non-
fattening recipes from six
celebrity couples:
SWEET-BEET WHIP
Try Liz Taylor's hungry-
man vegetable dessert —
Sweet-Beet Whip: Puree 6
medium-sized beets in
blender. Combine with one
cup sugarfree applesauce and
a pinch allspice. Chill in
dessert cups. Sprinkle with
grated orange and lemon peel
before serving. Four servings,
50 calories each.
HUNGRY-MAN PARFAIT
Debra Winger satisfies her
man's desperate-for-dessert
cravings with this fast and
healthy fruit cup:
4 ripe-but-not-mushy
pears, peeled and
cored, but left whole
1 cup pink wine
1/2 cup pear-apple juice
concentrate
% tsp. honey
poppyseed
Place pears in a heavy
skillet. Cover with wine, juice
and nutmeg. Cover loosely.
Poach gently 25 minutes.
Spoon into cups or cham-
pagne glasses. Top with
poaching juice, a dash of
nutmeg, a sprinkle of pop-
pyseed, and serve warm. Four
servings, 175 calories each.
Optional: Add one tablespoon
lo-cal whipped cream before
adding sprinkle and spice.
Between meals? Winger
satisfies chocolate cravings
with shoestring licorice.
SINLESS BROWNIES
Don't want to cheat with
high-calorie cheesecake? Try
bridegroom John McEnroe's
calorie-trimmed cake recipe
on your mate.
1 /4 cup diet margarine,
melted
3 tablespoons honey plus
1 teaspoon vanilla
extract
% cup skim milk
1 oz. unsweetened cocoa
powder or carob
powder
1 cup "lite" cake flour
2 eggs
1 oz. nuts, chopped
Preheat oven to 350 de-
grees. Combine margarine,
honey, vanilla and cocoa or
carob powder. Cook, stirring
over medium heat in a small

saucepan for two minutes.
Cool.
Combine flour and nuts. In
a mixing bowl, beat eggs. Add
carob (cocoa) mixture and
blend. Add flour-nut blend.
Pour into non-stick 8-inch
square non-stick baking pan.
Bake 20 minutes. Cool; cut in-
to 16 squares and remove
from pan. 55 calories each.
CA SSATA
Maria Shriver's an I-hate-
to-cook-but-I-love-to-eat type.
Try her Half-Homemade
Calorie-Trimmed Cassata:
Slice one bakery pound cake
into thirds horizontally. Place
on wax paper. Combine one
teaspoon decaf and 1/4 cup
rum extract. Mix with one
cup fat-reduced cottage
cheese, one tablespoon sugar,
1 /4 lb. crushed nuts and 1/4 cup
chocolate chips. Spread one
layer with one-half filling. Top
with second layer. Spread on
remaining filling and top
with last layer. Sprinkle with
cinnamon and powdered
milk.

"ORANGE" ORANGES
Instead of glazed donuts,
,here's the glazed orange-
gooey-but-good-for-only-
100-calories-a-serving dessert
actor Tony Danza serves his
new bride, Tracy.
Remove rind, membranes
and the pit from two large
naval oranges. Cut in half,
slice thin and overlap slices in
a flat, square pan. Sprinkle
with curacao or any orange-
flavored liqueur.
Glaze: Melt Y3 cup of sugar-
reduced orange marmalade;
stir in two to four tablespoons
liqueur. Pour over the sliced
oranges. Cover and chill un-
til serving time. Serves 4-6.
Good with vanilla wafers.
SIC FRUIT ICE
Last but not least, a grande-
finale dessert for two
from sex-kitten-turned-Mrs.,
Bridget Bardot.
2 cups unsweetened fresh
raspberries
1/2 cup unsweetened fresh
blueberries
Juice of half an orange
% large peach, pitted and
peeled
% Tbsp. juice concentrate
1 Tbsp. apple juice
concentrate
1/2 tsp. vanilla
Fresh mint and
raspberries (garnish)
Blend all but garnish until
smooth. Pour into ice cube
trays. Freeze until slushy,
about one hour. Spoon into
tulip-shaped dessert glasses
and chill. Garnish with mint
and berries. Four servings.
