Food and service takes over from there to pro- vide come-back substance. It's owned by Linda Parker, who came here from Taiwan in 1971 . . . A year later, she went to work as a waitress at Cantonese Village in Westland . . . Then Linda was manager/hostess of New Pek- ing in Garden City from 1978 until 1982 when she opened Szechuan Gardens in Rochester . . . and worked with Joe Chue at House of Hunan on W. 12 Mile in Southfield. She and Joe are now part- ners in the new Hunan Palace, which opened March 5 . . . seating 150 for dining at booths and tables . . . with a cocktail lounge for 40 more. Center of the Hunan Palace dining room ceiling is much like that at an emperor's palace, with gold dragons im- bedded in wood . . . Mirrored walls give a look of expanse . . . and the 18-foot, 1,500-gallon salt water fish tank is a beautiful sight to see . . . rare tropical fish in gorgeous colors swimming in a huge aquarium with water splashing up to its top. The new Hunan Palace on W. 10 Mile is not overly or- nate in its decor . . . Some pic- tures are on the walls, padd- ed booths have wood on the sides and some of the pieces are hand-carved . . . However, emphasis has rightly been placed on the food and service . . . with many Chinese and Japanese people dining in the intimate atmosphere. Eating out at Hunan Palace is an experience . . . because it has dishes seldom seen at many Oriental establishments of this nature. Items on the menu that are starred for hotness and spicy flavoring can be made mild also . . . The Hunan Palace menu states three "Impor- tant Notes In Ordering Your Meal" . . . "1. All our dishes are individually cooked to order in the traditional Chinese way. Some of the dishes require longer cooking. If you have limited time, please let our manager know and we will cooperate. 2. If, for medical reasons, you can- not eat certain foods, i.e., salt, fat, MSG (of which we use a very small amount), please let us know and we will pay special attention to your dishes. 3. All the dishes can be specially prepared to respect your religious faith (such as vegetable dishes, etc.)" The sizzling rice soup is chock full of chicken, shrimp, green peas, bamboo shoots, water chestnuts, mushrooms, carrots and rice . . . no skim- ping . . . and plenty of good taste. Its Shanghai spring roll with Chinese cabbage, shrimp, bamboo shoots and black mushrooms, is very light, crispy and flavorful .. . The shrimp toast made with ground water chestnuts, ground shrimp and sesame oil is a delightful appetizer. Our entrees were savory en- joyments . . . Hunan Palace's delight of three is a big favorite . . . shrimp, scallops, crabmeat, bamboo shoots, water chestnuts, baby corn, straw mushrooms, peapods, broccoli and bok choy (Chinese vegetable). Sesame chicken and broc- coli was on many tables besides ours . . . white breast of chicken stir-fried with homemade brown sauce. Velvet shrimp are whole jumbo shrimp with broccoli, bamboo shoots and white egg sauce. Linda does just about everything at Hunan Palace . . . from hostessing to mixing drinks to busing tables and when necessary, washing dishes or cooking or helping her waitresses . . . She is a sweet, charming, hard- working gal . . . very cons- cientious and eager to please . . . Linda has names for many of the pretty fish in her aquarium . . . and they flock around when she comes over to pay them attention. Hunan Palace is a big favorite at lunch also . . . with its low-priced regulars and specialties . . . The carry-out menu is among the area's largest and most varied .. . Dinners are served at any time. Hours are . . . Monday through Thursday, 11:30 a.m. to 10:30 p.m. . . . Friday and Saturday, 11:30 a.m. to 11:30 p.m. . . . Sunday, noon to 10 p.m. The big sign that says Hunan Palace is more than location . . . It means you have arrived at a place with quality . . . at reasonable prices . . . in good Oriental dining.
