he Prime Time Dining Club is an exclusive menu featuring some of our most
populat entrees. Each dinner is served with Mountain Jack's fresh salad bar, homemade
soup, a loaf of bread and choice of rice pilaf, pan-roasted redskins or baked potato.
Entrees from the Prime Time Dining Menu may be ordered anytime by 6:30 p.m. Mon-
day through Thursday and by 4:00 p.m. on Sunday.

A separate menu of over 60
wines is equally effortless
reading.
Sipping on a beautiful
Chassagne Montrachet,
Bouchard Pere et Fils wine
with its silky flavor and
tender body, was a delightful
beginning.
From the lounge with its
seating for 18 plus 11 tall
chairs at a bar that wasn't
there when the Benchmark
originally opened, we ad-
journed to the 96-seat dining
room of plush chairs and
booths . . . white linen table
cloths over red.
My appetizer of Norwegian
salmon, sliced,at tableside by
Ed and served by Fenton, was
simply elegant . . . On Ed's
cart were chopped onions,
capers, chopped egg whites
and chopped egg yolks . . . I
took all but the chopped yolks
. . . and enjoyed the start of a
delicious dining experience.
Then soup of the day, a
delightfully light cream of
broccoli with a taste all it's
own.
It was time for Ed to do his
masterful thing with a large
wooden bowl . . . the prepar-
ing of a gorgeous-looking
Caesar salad for everyone but
me . . . I opted for the cold,
crisp assortment of domestic
and imported greens.
A most impressive sight
was that of salad forks in ice
cubes for the Benchmark
customers to take themselves
. . . true elegance.
Then Fenton completely
deboned my Dover sole at
tableside . . . with a careful
skill that kept the tender
Dover sole from falling apart
as he layered each piece atop
the other.
It was a superb selection
and livened my taste buds
with a sense of intrigue.
Prior to the entree we had
cleansed our palates with
raspberry sorbet in prepara-
tion for the savory enjoyment.
Others had sauteed shrimp,
escargot in pasta shells,
American lobster bisque
soup, grilled whitefish, baby
lobster tails, steak Diane,
roast rack of lamb, lobster fra
diablo served over angel hair
pasta . . . All entrees were
served with large, gleaming
covers atop the oversized
plates.
Fenton explains the daily
specials with such emphasis
and expression that your
mouth waters in anticipation
with each suggestion.
