When he was allergic to wheat, I used to substitute rice flour for the small amount of wheat flour. This version is not only easy to prepare (I use a food pro- cessor, and let Trevor add the ingredients), but it's also relatively healthful (it's higher in protein and much lower in fat than most cheese- cakes). The recipe is adapted from my cookbook Don't Tell 'Em It's Good For 'Em and was originally created by one of my co-authors, Nancy Baggett. Crust: % cup graham cracker crumbs 1% tablespoons slightly softened butter or margarine 1 tablespoon sugar 1/8 teaspoon fresh grated lemon peel (yellow part only) Filling: 1 (15- to 16-ounce) container part-skim ricotta cheese 1 (8-ounce) container plain yogurt 1 small lemon, grated peel (yellow part only) and juice 1 cup sugar 2% tablespoons flour 1 (8-ounce) package cream cheese, cut into 8 pieces 2 large whole eggs 2 large egg whites (discard yolks or use for another purpose) 2% teaspoons vanilla extract To prepare the crust, com- bine all the crust ingredients in a bowl or a food processor. Mix until well blended and crumbly. Press firmly into the bottom (only) of an 8Y2 or 9-inch springform pan. Bake in a preheated 350-degree oven for 15 minutes, or until lightly browned, and set aside on a rack to cool. For the filling, put the ricot- ta, yogurt, lemon peel and juice, sugar, and flour into a food processor (or blender), and process for 1 1/2 to 2 min- utes or until liquefied and completely smooth. If a food processor is used, add the cream cheese, one piece at a time, through the feed tube while the food processor is running, and process until completely blended. Add the whole eggs, egg whites and vanilla, and process about 10 to 15 seconds longer, or just until blended. (If a blender is used, set aside the ricotta mexture. Put the cream cheese into a mix- ing bowl, and beat with an electric mixer until smooth; then beat in the whole eggs, egg whites and vanilla. Final- ly, beat in the blended ricot- ta mixture until thoroughly incorporated and smooth.) Pour the cheesecake batter over the prepared graham cracker crust. Bake in a pre- heated 350-degree oven for 15 minutes; then lower the tem- perature to 325 degrees, and bake for 1 hour and 15 to 20 minutes longer, or until the cheesecake center is slightly puffed and seems "set" when the surface is lightly tapped. Remove to a rack and cool in the pan. Refrigerate the cake until it is thoroughly chilled (preferable overnight) before removing from the pan and serving. If desired, top with sliced fresh strawberries or other fruit. Makes 8 to 10 servings.
