"Just before the holidays, Chef Bill Watson was brought in as a corporate chef to groom Chef de Cuisine Linda Praasterink. Unfortunately, his menu and style did not agree with our guests. Conse- quently, at the beginning of February we parted company. Rather than replace him with yet another new style of cuisine, I made a decision that should have been made months ago. On Feb. 8 I took over the executive chef's posi- tion at Sebastian's. "Since opening my first restaurant eight years ago, I have missed the excitement and satisfaction of cooking in a fine-dining restaurant. Hav- ing five operations and 250 employees has kept me from getting too directly involved with any single aspect of any of the restaurants. However, Sebastian's is a special restaurant that requires the special attention that only a proprietor can give. "I hope that you enjoy my menu and that you express any opinions you may have to either myself or my staff. Whenever possible, I would be happy to come out of the kit- chen to listen to your com- ments or suggestions."
