and lobster Cantonese

periments with Indian
meals (for a high school ex-
change student in 1985)
made it apparent that the

the Kosher Home by Betty S.

Goldberg covers the vast field.
It includes every portion of
the globe and the food listed
is in the strict adherence to
the traditional dietary
regulations.
There is a special section
applied to the Middle East
and it includes, in addition to
Israel, Greece, Turkey,
Armenia, Morocco and Iran.
The author and the collec-
tor of the culinary treats
states that "centuries of Arab
invasions had lasting in-
fluence on the types of foods
prepared in different parts of
the region."
Thereupon Mrs. Goldberg,
who is widely recognized as
an expert in the culinary arts,
goes into detail about the
foods in each portion of the
Middle East and the recipes
provided for the Jewish home
gain great values as well as a
knowledge of the historic
background about them.
It is in a general way that
Mrs. Goldberg introduces her
subject to show how all foods
everywhere can be treated
Jewishly. In a remarkable
way, the accomplished author
kashered food from
everywhere. Her form of ap-
proach in her specialized
dietary skill, as she advises
the reader in her preface to
the vast amount of knowledge:
